While this kind of imbalance can occur, my view is that when certain areas feel under-sampled, the intended workflow is to manually add vertices in the Trace view and then apply Refine to redistribute them:
I was not entirely sure which parts you were referring to, because in your original example there are convex areas, particularly around sharp tips, where vertices already appear to be more dense than necessary:

Because of this, I am concerned that introducing a parameter specifically to increase vertex density on convex edges could also lead to adding unnecessary vertices in areas like these.
I do agree that there is room for improvement in the tracing results overall. However, I am not convinced that adding a dedicated parameter for convex edges would be the most effective solution.
If anything, it may be more useful to provide a feature that allows users to locally increase vertex density along an edge, for example by brushing over it.
